The other day we had quesadillas for dinner. I bought the tortillas with three kids in tow so I can't be entirely blamed that I picked up a huge stack of corn tortillas instead of flour. They make a very different texture then what we are used to for quesadillas.
However, Jim fried a bunch tonight to make tortilla chips and they were fabulous.

Sounds yum. I got to go to my favorite Mexican place on Friday. Mmmmmm....
I actually have corn tortillas in the fridge that I thought I would use and haven't. Any advice on frying them?
Jim cut the tortillas into wedges (cut a stack into sixths) and then used his fryer so he had control on the temperature and a basket to get them out with. He fried them at 350 degrees. They apparently went pretty quickly (pull them out as soon as the bubbling slows down). He drained them on paper towels sitting on a cookie sheet and salted them immediately. We didn't really try to store them...we ate everything he fried (like normal).
